Production and Flavor Method: Cooked in underground conical stone ovens using mesquite and ocote wood, crushed with a tahona, naturally fermented in pine vats, and double-distilled in copper pot stills. ABV: Standard bottling is 40.5% ABV, though a high-proof 102-proof (51% ABV) version is also available. Profile: Earthy and vegetal upfront, balancing robust smoke with bright citrus notes and a clean finish.
