Kentucky Bourbon 101: Distilleries, History & What to Drink

America's Native Spirit
Bourbon is America's only native spirit — a whiskey so deeply tied to its homeland that federal law defines it. While bourbon can technically be made anywhere in the United States, Kentucky produces roughly 95% of the world's supply, and for good reason: the state's limestone-filtered water, dramatic temperature swings, and centuries of distilling tradition create conditions that are nearly impossible to replicate elsewhere.
What Makes It Bourbon?
To be called bourbon, a whiskey must meet strict legal requirements:
- Made in the United States
- Mash bill of at least 51% corn
- Distilled to no more than 160 proof
- Aged in new, charred American oak barrels
- Entered into the barrel at no more than 125 proof
- Bottled at a minimum of 80 proof
- No added coloring, flavoring, or additives
The new charred oak barrel is the key — it imparts the signature vanilla, caramel, and toasted oak character that defines the bourbon style.
Kentucky's Flavor Profile
Kentucky bourbon is known for its rich, sweet, and warming character:
- Vanilla and caramel — from the new charred oak
- Corn sweetness — the dominant grain in the mash
- Baking spice — cinnamon, nutmeg, and clove (especially in high-rye bourbons)
- Toasted oak — from years in the barrel
- Dried fruit — cherry, fig, and raisin in older expressions
Key Distilleries to Know
Buffalo Trace Distillery
Home to some of the most coveted bourbons in the world, including Pappy Van Winkle, Eagle Rare, and the Buffalo Trace Antique Collection. Their flagship Buffalo Trace Kentucky Straight Bourbon is one of the best values in the category — rich, complex, and endlessly drinkable.
Heaven Hill Distillery
The largest independent family-owned distillery in the US, Heaven Hill produces an extraordinary range including Elijah Craig, Evan Williams, Larceny, and the legendary Parker's Heritage Collection. Elijah Craig Small Batch is a benchmark bourbon at an accessible price.
Maker's Mark
The distillery that put wheated bourbon on the map. By substituting wheat for rye in the mash bill, Maker's Mark produces a softer, sweeter, more approachable style. Their Star Hill Farm in Loretto is one of Kentucky's most beautiful distillery destinations.
Woodford Reserve
Kentucky's most award-winning distillery, Woodford Reserve is known for its triple-distilled, pot still-influenced bourbon with a complex, balanced profile. Their Master's Collection annual releases are among the most anticipated limited expressions in the industry.
Wild Turkey
Bold, high-proof, and unapologetically American. Wild Turkey 101 is a classic — full-bodied rye spice, vanilla, and a long warming finish. Master Distiller Eddie Russell continues a family legacy that spans generations.
Bourbon Trail Tips
Kentucky's Bourbon Trail is one of America's great travel experiences — a self-guided tour through distilleries across the state. Highlights include the Buffalo Trace campus in Frankfort, the Maker's Mark estate in Loretto, and the cluster of distilleries in Bardstown, the "Bourbon Capital of the World."
